ORANGE GRANITA

Ingredients:
- 50 g caster sugar
- 1 rsp earl grey tea leaves
- 1 tbsp finely chopped fresh root ginger
- 6 juice of orange
- 100 ml sweet dessert wine
Method:
Place the orange juice in a pan with the wine, sugar and ginger and bring to the boil, stirring until the sugar has dissolved.
Stir in the tea leaves, remove from the heat and set aside for to infuse for 4 minutes.
Strain through a sieve into a shallow rigid plastic container and allow to cool completely.
Freeze for one hour, then remove the container from the freezer and stir the mixture to break up the ice crystals.
Return to the freezer and repeat the process until you have a mixture of fine-grained frozen crystals and no liquid. Idealy it should be eaten the minute it has frozen, so make sure that start the recipe only a couple of hours before you wish to serve it.
To serve , scrape off layers of the granite with a tablespoon rather than using an icecream scoop and spoon into martini glasses set on serving plate.
